Food Diary Entry #9 (for, Thu 05/02/2013)

For breakfast:
Bagel thins with almond butter and raspberry preserves. I also had some apple slices.

For Lunch:
For lunch I had a tortilla topped with the last bit of chicken I had, some cheese, romaine lettuce, cilantro, tomatoes, and chipotle salsa. I also had steamed edamame with chili garlic sauce. This meal was so filling and spicy!

For an afternoon snack/beverage:
Since I loved how my iced coffee turned out the other day I decided to make another one. As you can tell I made way too much and yes I finished it all.

For dinner:
So I completely forgot to take a picture of my smoothie for dinner but here is a picture of my fiance’s. His smoothie has kale, mango, some walnuts, and water. My smoothie had kale, raspberries, banana, and some walnuts. My fiance also had nachos (we are talking about a huge plate of nachos!) and cajeta empanadas (caramel stuffed empanadas, the last picture on this post fyi. it is a Mexican dessert). So I only had a few nacho pieces and I also had a string cheese. This was the most random dinner and not a very good one I may add. Next time I need to have a better meal for dinner because later I munched on…

Food Diary Entry #7 (for, Tues 4-29-2013)

Today fiance stayed home since he has a very bad sunburn! Yesterday we went to the doctor and he was given a shot, some antibiotics, ibuprofen, and a cream. He got this bad sunburn because he didn’t wear any sunscreen and went fishing for 9 hours! So please wear sunscreen if you are going to be out in the sun for hours! He definitely learned his lesson and he needed to stay home from work to rest. Today he is able to walk without saying “ow”, so we are definitely making an improvement! Today has been very relaxing and there has been lots of eating going on.

Around 3 pm today I decided to try Peanut Butter Fingers chicken tacos in my old school crock pot! here is proof:

See i told you it was old school! My mom left me this crock pot on Cas’s first birthday party. I found so many recipes that look really easy and they use a crock pot!

For breakfast:
A strawberry and banana smoothie. I added a few almonds and a little bit of milk. I forget how sweet fruit can be when I don’t add kale or spinach to smoothies.

For lunch:
I wanted a little bit of everything for lunch today. I wanted edamame with a spicy sauce on top and a kale salad massaged with squeezed lemon juice. Both of these ideas are not original since they are from two restaurants I visit often. One is a sushi place and the other is a vegetarian restaurant. So what do I have on my plate? Well, a kale salad, roasted red pepper hummus, pita chips, and steamed edamame with chili garlic sauce on top. You guys I ate every single thing! I left nothing! Yumm-O!

Afternoon snack:
Since I was waiting on my 2 ingredient chicken tacos cooking in the slow cooker, the smell was making me hungry. I ate a lara bar to help with my growling stomach. I knew I wasn’t starving but I did want something small. This particular flavor is not my favorite but I did like the coconut in it! My favorite lara bar is the chocolate chip flavor!

Dinner:
So 5 1/2 hours the chicken tacos were ready! And they were totally worth the wait! My fiance likes flour tortillas with his tacos and I had two taco shells… plus a flour tortilla! I know, I know they are not healthy but they are one of my weaknesses. I normally have two tacos but I was really hungry by the time dinner came around so I had 3. These tacos were amazing, especially with salsa verde. My fiance added roasted chipotle salsa to his and they were just as delicious. This was super yummy and I was going to use romaine instead of iceberg but how can you eat a taco without the crispiness of iceberg lettuce! Cas had himself a tiny burrito with the chicken, lettuce, and tomatoes. He did eat half of eat and picked at it later.

Dessert:
2 Oreo cookies with a cup of milk. My fiance and I are now going to watch Justice League on Netflix until it is time for bed. (If you didn’t know, I love superhero tv shows, movies, and comics! My favorite is Batman!)

Food Diary Entry #5 (for Fri, 11-09-2012)

In the morning:
A huge cup of coffee today. Little Cas gave us a hard time last night and he woke up earlier than usual.

For Lunch:
Lunch was really late today since Cas’s schedule was off and it just changes everything! For lunch I had a spinach-kale-chicken-mandarin salad with poppyseed dressing.

For an afternoon snack:
I had an apple.

For dinner:
Before dinner, my little family and I went to Target. I was looking for the Bengal Spice tea and the Sweet Harvest Pumpkin Holiday tea from Celestial Seasonings. Unfortunately they where out of both!!! They must be very popular. I settled for the Madagascar Rooibos Vanilla tea instead and I also got some green tea since I was out. (Green tea is pretty much one of those staple items I have to have in my pantry.) While we where at Target the fiance and I were trying to decide what to eat for dinner. The fiance is on this crazy diet that I do not approve of by the way, but he was saying he was starving and that he wanted to grab some fast food. I instantly got upset because we are supposed to stay off fast food; so I suggested to buy items for enchiladas. (Even though I have never tried enchiladas before or made them before. It was a risky move, I know.) His eyes got big and he said, “Can you make american enchiladas?” I laughed and told him that I could try. So we grabbed turkey chili (the fiance actually chose turkey chili over beef chili 😮 ), low fat cheese, and corn tortillas. Anyways, we got home and I made the american enchiladas. To my surprise, they came out really good!! The fiance really loved them too and my cooking isn’t always good so I was pretty proud of myself.

To drink:
The fiance and I also grabbed some wine and beer at Target. Usually on fridays we are able to stay up late and have some drinks while we watch a movie. Its kind of become a tradition and every friday as soon as Cas goes to sleep for bedtime, we watch a movie (or two) while we drink a bit. We watched Dumb and Dumber since I had never seen it before. Oh, I had a glass and a half. 😉

Today may have not been my healthiest day but I won’t beat myself up for it.

Food Diary Entry #4 (for Thurs, 11-08-2012)

In the morning:
A huge glass of water.

For breakfast:
A Strawberry-Banana-Almond Smoothie.

For lunch:
Tuna Salad {I finished the leftover tuna and added 1 tbsp of light mayo, chopped spinach, 1 chopped pickle slice, 1/2 tsp lemon pepper seasoning} with Kale. I used kale as if they were crackers. I didn’t have any crackers so I tried the kale and I actually really liked it.

For an afternoon snack:
I had a small apple.

For dinner:
Turkey burgers on a bed of spinach. This was yummy!!! (I didn’t have any buns or bread, so I used spinach.) For one turkey patty; it included some chopped spinach, some parsley, pepper, salt, and a little bit of shredded mozzarella cheese. I did have my turkey burger with a little bit of ketchup and american cheese. I didn’t even miss the buns!! Oh and the fiance actually really liked the turkey patties! Which is like a surprise for me because he thinks I am weird that I choose turkey over beef.

For dessert:
Dark chocolate covered strawberries flavored yogurt. I totally invented this on the spot. (I’m sure someone has a better recipe somewhere.) I really wanted something chocolaty but I didn’t have anything around. I did remember however, that I still had a bag of Cacao Powder for which I use in smoothies or banana ice cream. So, I grabbed about 1/4 cup of vanilla yogurt, 1 tsp of cacao powder, and some chopped strawberries and mixed them all together. I wasn’t sure how it would taste but it tasted just like dark chocolate covered strawberries!!! I loved it! I think next time I will try this with bananas.

Today’s menu of food was just delicious from my breakfast to my dessert. i just can’t believe that I actually made all those meals myself. I’m extremely proud of myself!!

Grocery Haul from HEB Market

4 jugs of water, granola, baby mum-mums, baby puffs in the apple flavor, baby oatmeal cereal, stonyfield 32 oz vanilla yogurt, yobaby yogurt in the vanilla flavor, sweet potato, green beans, sweet peas, baby spinach, kale, cantaloupe, bananas, pears, apples, strawberries, and chicken.

So here is another post about my grocery shopping trip. This time I went to H-E-B Market; which I believe are only in Texas but I could be wrong. This H-E-B in particular carries organic items and non organic items. Which I absolutely love! I’m hoping I will use up all these groceries and i would like to post all the meals I make. This way I can keep track of what I actually use and what I should quit buying.

On a side note: I will also be including groceries I already have.

Today’s post will be a short one for now.

Baby food making craze

So, last time I mentioned that I would start making baby food for baby Cas. I have been inspired by a website I found called, weelicious! Weelicious has many healthy recipes for children and families. There are so many baby food puree recipes on there, that I have gone crazy! I love this website so much that I have made about 4-5 of the recipes on there. The first recipe I decided to make was the plum and banana puree. Cas loves bananas and I thought that plum and banana sounded really good!

This recipe is so simple to make and it only takes a few minutes! I made it using a nutribullet but i’m sure you can use a blender or a food processor to make this puree. This puree wasn’t Cas’s favorite but it tasted delicious to me. 😀 (Plum banana link)

The next recipe I made was the raspberry banana puree and this one was a hit! Cas and I both loved it so much. This recipe just needed one banana and a cup of raspberries. It made enough for 2 servings and Cas just devoured it. This puree also came out in a pretty hot pink color which I really liked.

I also decided to make a butternut squash puree because it is one of those vegetables that you just need to bake and then puree. Cas also happens to like butternut squash so it was nice to give him some homemade food. I was really scared to cut the butternut squash but it was really easy thanks to this video I watched.

Lastly I made myself a kale-rasp-banana shake. I loved Cas’s raspberry banana puree so much that I decided to make into a shake.

So far making baby food is a lot easier than I thought. I make enough baby food for 2 to 3 days. I have yet to freeze baby food since  the idea of it doesn’t sound so good. I guess I won’t know until I try it out. Anyways for new parents who want to make their baby homemade purees, you should check out weelicious.com!
